CRUST

1/3c. /30g. Rolled Oats

1/3c. /30g. Oat Flour

1T. Granulated Stevia

1T. Resource High Protein

1/3c. /40g. Butter

Zest from one Lemon

FILLING

1 1/2c./400g. 100% Fat Free Greek Yogurt

3 scoops/84g. Resource High Protein

2 packets/15g. Gelatin

2T. of Lemon Juice

  • Begin by whisking all the dry ingredients together to make the crust.
  • Give your crust a sublime taste by adding lemon zest right into mixture.
  • Drizzle melted butter into the mixture and stir it until it’s well combined.
  • Spread some parchment paper in your pan and evenly press the crust onto it. Set it aside.
  • Whisk Resource High Protein and yogurt in a bowl.
  • Dissolve gelatin in a separate bowl with warm water and lemon juice. Whisk this until smooth.
  • Combine the gelatin and yogurt mixture and whisk away!
  • Pour the mix onto the curst and spread evenly.
  • Cover the pan with a plastic wrap and leave it to cool for a few hours or overnight in the refrigerator.
  • Once cooled, check if it has set by slowly pulling it out of the pan. Then, just slice and serve.
